A flavorful dish featuring chicken thighs seasoned with zaatar spice, served with roasted carrots and a creamy tahini sauce.

- 4 chicken thighs
- 2 tablespoons zaatar spice
- 2 tablespoons olive oil
- 4 medium carrots, peeled and cut into sticks
- 1 tablespoon honey
- Salt and pepper to taste
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Water as needed for tahini sauce
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the zaatar spice, olive oil, salt, and pepper.
- Rub the mixture over the chicken thighs.
- Place the chicken thighs on a baking sheet.
- In the same bowl, toss the carrot sticks with honey, salt, and pepper.
- Arrange the carrots around the chicken on the baking sheet.
- Bake for 30-35 minutes or until the chicken is cooked through and the carrots are tender.
- While the chicken and carrots are baking, prepare the tahini sauce by mixing tahini, lemon juice, and enough water to reach desired consistency.
- Serve the chicken thighs with roasted carrots and drizzle with tahini sauce.
Notes
- For extra flavor, marinate the chicken thighs in the zaatar mixture for a few hours before cooking.
- Adjust the thickness of the tahini sauce by adding more or less water.
- This dish pairs well with a side of rice or quinoa.
