Description

A flavorful dish featuring chicken thighs seasoned with zaatar spice, served with roasted carrots and a creamy tahini sauce.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons zaatar spice
  • 2 tablespoons olive oil
  • 4 medium carrots, peeled and cut into sticks
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Water as needed for tahini sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the zaatar spice, olive oil, salt, and pepper.
  3. Rub the mixture over the chicken thighs.
  4. Place the chicken thighs on a baking sheet.
  5. In the same bowl, toss the carrot sticks with honey, salt, and pepper.
  6. Arrange the carrots around the chicken on the baking sheet.
  7. Bake for 30-35 minutes or until the chicken is cooked through and the carrots are tender.
  8. While the chicken and carrots are baking, prepare the tahini sauce by mixing tahini, lemon juice, and enough water to reach desired consistency.
  9. Serve the chicken thighs with roasted carrots and drizzle with tahini sauce.

Notes

  • For extra flavor, marinate the chicken thighs in the zaatar mixture for a few hours before cooking.
  • Adjust the thickness of the tahini sauce by adding more or less water.
  • This dish pairs well with a side of rice or quinoa.
