Description

Zucchini Fritters are a delicious and healthy low-calorie snack made from fresh zucchini, perfect for any occasion.


Ingredients

  • 2 medium zucchinis, grated
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, egg, green onions, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Drop spoonfuls of the zucchini mixture into the skillet and flatten them slightly.
  5. Cook for 3-4 minutes on each side or until golden brown.
  6. Remove from skillet and place on paper towels to drain excess oil.
  7. Serve warm with your favorite dipping sauce.

Notes

  • For a gluten-free version, substitute all-purpose flour with almond flour.
