Description

A refreshing and healthy salad made with zucchini noodles, fresh vegetables, and a creamy hummus dressing.


Ingredients

  • 2 medium zucchinis
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup hummus
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis to create zucchini noodles.
  2. In a large bowl, combine the zucchini noodles, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. In a small bowl, whisk together the hummus, olive oil, lemon juice, salt, and pepper until smooth.
  4. Pour the hummus dressing over the salad and toss to combine.
  5. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
