Ingredients

- 2 medium zucchinis
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced

- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled

- 1/2 cup hummus

Instructions
- Spiralize the zucchinis to create zucchini noodles.
- In a large bowl, combine the zucchini noodles, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together the hummus, olive oil, lemon juice, salt, and pepper until smooth.
- Pour the hummus dressing over the salad and toss to combine.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
Notes
- For a vegan option, omit the feta cheese.
- Feel free to add other vegetables like bell peppers or radishes.
