- 1 cup rolled oats

- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon

Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Add in the large egg and vanilla extract, mixing until smooth and glossy.
- Mix in the shredded zucchini until evenly distributed.
- Whisk together the rolled oats, all-purpose flour, cinnamon, baking soda, baking powder, and salt in a separate bowl.
- Gradually add the dry mixture to the wet mixture, mixing until just combined.
- Fold in the chocolate chips until evenly dispersed.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet.
- Bake for about 10-12 minutes, until edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Dough can be chilled in the fridge for up to 24 hours for enhanced flavors. Store cookies in an airtight container for up to 5 days.
